  • Heat: high temperatures change the structure of fats and cause the oil to lose its aroma and taste quickly.
  • Air: continuous contact with oxygen leads to rancidity, which gives the oil an unpleasant taste and smell.

Choosing the right storage place

The best place to keep natural oils and amlou is a dark, cool cupboard away from the stove and oven. A stable, moderate temperature is far better than fluctuations. Avoid placing bottles on shelves near a window or above appliances that give off heat. For amlou, keeping it in a cool spot is usually enough; it can also be refrigerated in hot climates, left to soften a little before use.

The right containers make a difference

The type of container plays a major role in preserving quality. Always choose containers that protect the contents from outside elements.

  • Dark glass: it blocks a large part of the light and is the ideal choice for oils.
  • An airtight seal: a tightly closing lid reduces air entry and prevents leaks.
  • The right size: a container sized to your consumption reduces the empty space filled with air.

Always make sure to close the container well after each use, and use a clean, dry spoon with amlou to avoid introducing moisture.

Shelf life and signs of spoilage

The shelf life of natural oils varies according to their type and how they are stored, but the general rule is to consume them within the period recommended on the packaging. Watch for the signs that a product is no longer good:

  • a sharp or rancid smell that differs from the original aroma;
  • a clear change in colour or texture;
  • a bitter or unfamiliar taste.

If any of these signs appear, it is best not to consume the product.
